I think it's common knowledge that anything browned, burnt or scorched is carcinogenic. Modified food starch is starch (wheat, corn, etc.) that is treated with acid, which burns it to make it more shelf-stable. Caramel is made from scorched milk and sugar. Dextrose is a type of sugar added to baked goods to enhance browning.
