Home cooking for the holidays: Local homemakers share brunch recipes for Christmas - The Daily Reporter - Greenfield Indiana

Editor's note: The Hancock County Extension Homemakers presented live cooking demonstrations last month at the Hancock County Public Library. Missed out on the fun? Here are three recipes shared at the event to consider for Christmas brunch.

Directions: Whisk flour, baking soda, sugar, salt and cinnamon in a large bowl. In another bowl, combine eggs, buttermilk, oil and vanilla. Add the wet into the dry ingredients. Gently stir until combined. Pour desired-sized circles onto a hot griddle. Flip when bubbles begin to form on the top. Brown the other side and serve with your favorite syrup, or place them on a sheet pan in a low oven (200 degrees) to keep warm. Tip: for children, use a cookie scoop to make silver dollar pancakes, and add chocolate chips.

Directions: Brown sausage in a large skillet. After the sausage is fully cooked, add the butter. Mix flour into sausage until it's cooked, with no white flour showing. Pour milk over the top of the sausage until it's fully covered. Cook mixture over medium or high heat, stirring constantly until gravy thickens. Season to taste. Serve over warm biscuits.

Directions: Place potatoes in an eight-inch square baking dish. Sprinkle with cheese, ham and onions. Beat eggs, milk, pepper and salt; pour over all. Cover and refrigerate for several hours or overnight. Remove from refrigerator 30 minutes before baking. Bake uncovered at 350 degrees for 55-60 minutes.
